Ultimate Club Sandwich

Triple-decker toasted white bread layered with roast chicken, bacon, avocado, ripe tomato, iceberg, and a tangy herb mayo.

Ingredients

  • 6 slices thick white sandwich bread, toasted
  • 200g leftover roast chicken or poached breast
  • 4 rashers crispy streaky bacon
  • 1 ripe avocado, sliced
  • 2 ripe tomatoes, sliced
  • Crisp iceberg lettuce
  • 3 tbsp mayonnaise
  • 1 tbsp Dijon mustard and fresh chives

Method

  1. Mix mayo with Dijon and chives. Spread on all toast slices.
  2. Build layer 1: lettuce, tomato, bacon.
  3. Place second toast slice mayo-side down/up. Add chicken and avocado. Season all layers.
  4. Top with final toast. Press gently. Secure with cocktail sticks and cut into quarters on the diagonal.
