Ultimate Club Sandwich
Triple-decker toasted white bread layered with roast chicken, bacon, avocado, ripe tomato, iceberg, and a tangy herb mayo.

Ingredients
- 6 slices thick white sandwich bread, toasted
- 200g leftover roast chicken or poached breast
- 4 rashers crispy streaky bacon
- 1 ripe avocado, sliced
- 2 ripe tomatoes, sliced
- Crisp iceberg lettuce
- 3 tbsp mayonnaise
- 1 tbsp Dijon mustard and fresh chives
Method
- Mix mayo with Dijon and chives. Spread on all toast slices.
- Build layer 1: lettuce, tomato, bacon.
- Place second toast slice mayo-side down/up. Add chicken and avocado. Season all layers.
- Top with final toast. Press gently. Secure with cocktail sticks and cut into quarters on the diagonal.
