Classic Blueberry Pancakes
Light, golden pancakes dotted with fresh blueberries that burst into jammy pockets as they cook -- pure breakfast joy.

Ingredients
- 200g plain flour
- 2 tsp baking powder
- 2 tbsp caster sugar
- 2 large eggs
- 250ml whole milk
- 50g unsalted butter, melted plus extra
- 200g fresh blueberries
- Maple syrup and butter to serve
Method
- Sift flour and baking powder into a bowl. Add sugar and a pinch of salt.
- Make a well, crack in eggs, pour in milk, and add melted butter. Whisk until smooth batter forms.
- Heat a non-stick pan and butter lightly. Drop heaped spoonfuls and immediately scatter blueberries over.
- Cook 2 minutes until bubbles form, flip, cook 1 minute. Serve in a stack with extra blueberries and warm maple syrup.
