Classic Blueberry Pancakes

Ingredients

  • 200g plain flour
  • 2 tsp baking powder
  • 2 tbsp caster sugar
  • 2 large eggs
  • 250ml whole milk
  • 50g unsalted butter, melted plus extra
  • 200g fresh blueberries
  • Maple syrup and butter to serve

Method

  1. Sift flour and baking powder into a bowl. Add sugar and a pinch of salt.
  2. Make a well, crack in eggs, pour in milk, and add melted butter. Whisk until smooth batter forms.
  3. Heat a non-stick pan and butter lightly. Drop heaped spoonfuls and immediately scatter blueberries over.
  4. Cook 2 minutes until bubbles form, flip, cook 1 minute. Serve in a stack with extra blueberries and warm maple syrup.
