French Toast with Maple Syrup
Thick brioche slices soaked in a vanilla and cinnamon egg custard, pan-fried in brown butter until pillowy inside and golden-caramelised outside.

Ingredients
- 8 thick slices brioche loaf (2 days old)
- 3 large eggs
- 100ml whole milk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 40g unsalted butter
- Pure maple syrup to serve
- Fresh berries and icing sugar to serve
Method
- Whisk eggs, milk, vanilla, and cinnamon in a shallow dish.
- Soak each brioche slice for 1 minute per side until the custard is absorbed.
- Melt butter in a wide non-stick pan over medium heat until foaming and nutty. Cook soaked brioche 2-3 minutes per side until deep golden.
- Serve immediately with maple syrup, fresh berries, and a dusting of icing sugar.
