French Toast with Maple Syrup

Thick brioche slices soaked in a vanilla and cinnamon egg custard, pan-fried in brown butter until pillowy inside and golden-caramelised outside.

Ingredients

  • 8 thick slices brioche loaf (2 days old)
  • 3 large eggs
  • 100ml whole milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 40g unsalted butter
  • Pure maple syrup to serve
  • Fresh berries and icing sugar to serve

Method

  1. Whisk eggs, milk, vanilla, and cinnamon in a shallow dish.
  2. Soak each brioche slice for 1 minute per side until the custard is absorbed.
  3. Melt butter in a wide non-stick pan over medium heat until foaming and nutty. Cook soaked brioche 2-3 minutes per side until deep golden.
  4. Serve immediately with maple syrup, fresh berries, and a dusting of icing sugar.
