Blue Cheese and Pear Tart

The bold saltiness of Gorgonzola meets ripe, sweet pear in a flaky puff pastry case -- an elegant dinner-party opener or a luxurious snack.

Ingredients

  • 375g ready-rolled puff pastry
  • 2 ripe pears, cored and thinly sliced
  • 120g Gorgonzola or Roquefort, crumbled
  • 50g walnut halves
  • 1 tbsp honey
  • 1 egg, beaten
  • Fresh thyme sprigs
  • Black pepper

Method

  1. Unroll puff pastry onto a lined baking sheet. Score a 2cm border all the way around without cutting through.
  2. Scatter blue cheese inside the border, then layer pear slices over the top. Add walnuts and thyme.
  3. Brush the border with beaten egg. Bake at 200C for 22-25 minutes until puffed and deep golden.
  4. Drizzle with honey straight from the oven and finish with freshly cracked black pepper. Serve warm.
