Grilled Salmon with Lemon Butter
Wild salmon fillets grilled over high heat to crispy-skinned perfection, finished with a simple but luxurious lemon and dill butter.

Ingredients
- 4 salmon fillets (about 180g each), skin-on
- 100g unsalted butter, softened
- Zest and juice of 1 unwaxed lemon
- 2 tbsp fresh dill, chopped
- 1 tbsp capers, finely chopped
- 2 tbsp olive oil
- Sea salt and white pepper
- Asparagus or green beans to serve
Method
- Mix butter with lemon zest, dill, capers, and season. Roll in cling film to a log and refrigerate.
- Pat salmon dry and season generously with salt and white pepper.
- Heat a heavy griddle or frying pan until smoking. Add oil and place salmon skin-side down. Cook 4-5 minutes without moving.
- Flip and cook 1-2 minutes more. Plate skin-side up and place a slice of flavoured butter on top to melt over the fish.
