Grilled Salmon with Lemon Butter

Wild salmon fillets grilled over high heat to crispy-skinned perfection, finished with a simple but luxurious lemon and dill butter.

Ingredients

  • 4 salmon fillets (about 180g each), skin-on
  • 100g unsalted butter, softened
  • Zest and juice of 1 unwaxed lemon
  • 2 tbsp fresh dill, chopped
  • 1 tbsp capers, finely chopped
  • 2 tbsp olive oil
  • Sea salt and white pepper
  • Asparagus or green beans to serve

Method

  1. Mix butter with lemon zest, dill, capers, and season. Roll in cling film to a log and refrigerate.
  2. Pat salmon dry and season generously with salt and white pepper.
  3. Heat a heavy griddle or frying pan until smoking. Add oil and place salmon skin-side down. Cook 4-5 minutes without moving.
  4. Flip and cook 1-2 minutes more. Plate skin-side up and place a slice of flavoured butter on top to melt over the fish.
