Classic Roast Chicken with Herbs

A perfectly golden roast chicken slathered with herbed butter, rested on a bed of aromatics, and served with golden roasting juices.

Ingredients

  • 1 whole chicken (about 1.8kg)
  • 100g unsalted butter, softened
  • 1 lemon, halved
  • 1 whole head of garlic, halved
  • 2 tbsp fresh thyme and rosemary, chopped
  • 1 tsp smoked paprika
  • 2 onions, quartered
  • Salt and freshly cracked black pepper

Method

  1. Preheat oven to 200C. Bring chicken to room temperature for 30 minutes.
  2. Mix butter with herbs, paprika, salt, and pepper. Ease fingers under the skin and push butter underneath. Rub remainder over the surface.
  3. Stuff cavity with lemon and garlic. Sit chicken on onion quarters in a roasting tin. Season all over.
  4. Roast for 20 minutes per 500g plus 20 minutes. Rest for 20 minutes before carving. Deglaze tin with white wine for the jus.
