Greek Salad with Feta
Chunky tomatoes, crisp cucumbers, red onion, Kalamata olives, and a thick slab of barrel-aged feta -- a Cycladic summer on a plate.

Ingredients
- 4 ripe beef tomatoes, cut in chunks
- 1 large cucumber, halved and sliced
- 1 red onion, thinly sliced
- 200g Kalamata olives
- 200g good-quality feta in blocks
- 1 tsp dried oregano
- 4 tbsp extra-virgin olive oil
- Sea salt and freshly cracked pepper
Method
- Combine tomatoes, cucumber, and red onion in a large bowl.
- Add olives and season with salt and pepper. Toss gently.
- Plate the salad and place a thick slab of feta on top -- do not crumble.
- Drizzle generously with olive oil, sprinkle with dried oregano, and serve with crusty bread.
