Greek Salad with Feta

Chunky tomatoes, crisp cucumbers, red onion, Kalamata olives, and a thick slab of barrel-aged feta -- a Cycladic summer on a plate.

Ingredients

  • 4 ripe beef tomatoes, cut in chunks
  • 1 large cucumber, halved and sliced
  • 1 red onion, thinly sliced
  • 200g Kalamata olives
  • 200g good-quality feta in blocks
  • 1 tsp dried oregano
  • 4 tbsp extra-virgin olive oil
  • Sea salt and freshly cracked pepper

Method

  1. Combine tomatoes, cucumber, and red onion in a large bowl.
  2. Add olives and season with salt and pepper. Toss gently.
  3. Plate the salad and place a thick slab of feta on top -- do not crumble.
  4. Drizzle generously with olive oil, sprinkle with dried oregano, and serve with crusty bread.
