Classic Caesar Salad
Crisp romaine lettuce, house-made anchovy Caesar dressing, golden croutons, and a blizzard of aged Parmesan -- the greatest salad ever created.

Ingredients
- 2 heads romaine lettuce, washed and torn
- 4 anchovy fillets (dressing)
- 2 garlic cloves (dressing)
- 1 egg yolk (dressing)
- 60ml extra-virgin olive oil
- 20g Parmesan, finely grated
- Juice of 1 lemon
- Thick-cut bread croutons
Method
- Make dressing: pound anchovies and garlic to a paste. Whisk in egg yolk, then slowly stream in olive oil to emulsify. Add lemon juice and Parmesan.
- Fry bread cubes in olive oil until golden and crunchy on all sides. Season with flaked salt.
- Toss romaine with dressing until every leaf is coated. Plate and scatter croutons over.
- Finish with extra Parmesan shavings and freshly cracked black pepper.
