Classic Caesar Salad

Crisp romaine lettuce, house-made anchovy Caesar dressing, golden croutons, and a blizzard of aged Parmesan -- the greatest salad ever created.

Ingredients

  • 2 heads romaine lettuce, washed and torn
  • 4 anchovy fillets (dressing)
  • 2 garlic cloves (dressing)
  • 1 egg yolk (dressing)
  • 60ml extra-virgin olive oil
  • 20g Parmesan, finely grated
  • Juice of 1 lemon
  • Thick-cut bread croutons

Method

  1. Make dressing: pound anchovies and garlic to a paste. Whisk in egg yolk, then slowly stream in olive oil to emulsify. Add lemon juice and Parmesan.
  2. Fry bread cubes in olive oil until golden and crunchy on all sides. Season with flaked salt.
  3. Toss romaine with dressing until every leaf is coated. Plate and scatter croutons over.
  4. Finish with extra Parmesan shavings and freshly cracked black pepper.
