Lemon Posset

Just three ingredients -- cream, sugar, and lemon -- transform into a silky, barely-set dessert of extraordinary elegance.

Ingredients

  • 600ml double cream
  • 150g caster sugar
  • Juice and zest of 3 unwaxed lemons
  • Fresh raspberries to serve
  • Shortbread fingers to serve

Method

  1. Bring cream and sugar to a rolling boil, stirring. Boil for exactly 3 minutes.
  2. Remove from heat and immediately stir in lemon juice and zest. The mixture will thicken noticeably.
  3. Pour through a fine sieve into 4-6 glasses or ramekins.
  4. Refrigerate for at least 3 hours until set. Serve topped with fresh raspberries and shortbread.
