Lemon Posset

Ingredients
- 600ml double cream
- 150g caster sugar
- Juice and zest of 3 unwaxed lemons
- Fresh raspberries to serve
- Shortbread fingers to serve
Method
- Bring cream and sugar to a rolling boil, stirring. Boil for exactly 3 minutes.
- Remove from heat and immediately stir in lemon juice and zest. The mixture will thicken noticeably.
- Pour through a fine sieve into 4-6 glasses or ramekins.
- Refrigerate for at least 3 hours until set. Serve topped with fresh raspberries and shortbread.
