Dark Chocolate Mousse

Ingredients

  • 200g dark chocolate (70% cocoa solids)
  • 4 large eggs, separated
  • 2 tbsp caster sugar
  • Pinch of sea salt
  • 1 tsp vanilla extract
  • Cocoa powder or shaved chocolate to serve

Method

  1. Melt chocolate in a bowl set over simmering water. Cool to just warm. Beat in egg yolks one at a time.
  2. Whisk egg whites with a pinch of salt to soft peaks. Add sugar and whisk to stiff glossy peaks.
  3. Fold one third of whites into chocolate to loosen, then fold in the rest gently to keep the airiness.
  4. Divide into glasses and refrigerate for at least 3 hours. Dust with cocoa or top with chocolate shavings to serve.
