Dark Chocolate Mousse
A deceptively simple three-ingredient chocolate mousse made with top-quality dark chocolate -- silky, airy, and breathtakingly rich.

Ingredients
- 200g dark chocolate (70% cocoa solids)
- 4 large eggs, separated
- 2 tbsp caster sugar
- Pinch of sea salt
- 1 tsp vanilla extract
- Cocoa powder or shaved chocolate to serve
Method
- Melt chocolate in a bowl set over simmering water. Cool to just warm. Beat in egg yolks one at a time.
- Whisk egg whites with a pinch of salt to soft peaks. Add sugar and whisk to stiff glossy peaks.
- Fold one third of whites into chocolate to loosen, then fold in the rest gently to keep the airiness.
- Divide into glasses and refrigerate for at least 3 hours. Dust with cocoa or top with chocolate shavings to serve.
