Banana Walnut Loaf
The ultimate way to use overripe bananas -- dark, squidgy, and fragrant with warming spice, packed with toasted walnuts throughout.

Ingredients
- 3 very ripe bananas (about 280g peeled weight)
- 175g self-raising flour
- 150g light brown sugar
- 100g unsalted butter, melted
- 2 large eggs
- 100g walnuts, roughly chopped and toasted
- 1 tsp ground cinnamon
- 1/2 tsp bicarbonate of soda
Method
- Preheat oven to 180C. Grease and line a 900g loaf tin.
- Mash bananas thoroughly. Beat in melted butter, eggs, and sugar.
- Fold in flour, bicarb, cinnamon, and most of the walnuts.
- Pour into tin, scatter remaining walnuts over the top, and bake 55-60 minutes until a skewer comes out clean.
