Red Velvet Layer Cake
Layers of crimson buttermilk cake separated by clouds of classic cream cheese frosting -- a showstopper for any celebration.

Ingredients
- 350g plain flour
- 2 tbsp cocoa powder
- 300g caster sugar
- 240ml buttermilk
- 240ml vegetable oil
- 2 large eggs
- 2 tbsp red food colouring (gel)
- 500g cream cheese frosting (see method)
Method
- Whisk all wet ingredients including colouring together in a jug. Sift dry ingredients into a large bowl.
- Fold wet into dry until just combined. Do not overmix. Divide between three 20cm lined cake tins.
- Bake at 175C for 28-30 minutes. Cool completely on racks.
- Make frosting by beating 500g full-fat cream cheese with 100g butter and 400g icing sugar until smooth. Layer and coat the cooled cake.
