Red Velvet Layer Cake

Layers of crimson buttermilk cake separated by clouds of classic cream cheese frosting -- a showstopper for any celebration.

Ingredients

  • 350g plain flour
  • 2 tbsp cocoa powder
  • 300g caster sugar
  • 240ml buttermilk
  • 240ml vegetable oil
  • 2 large eggs
  • 2 tbsp red food colouring (gel)
  • 500g cream cheese frosting (see method)

Method

  1. Whisk all wet ingredients including colouring together in a jug. Sift dry ingredients into a large bowl.
  2. Fold wet into dry until just combined. Do not overmix. Divide between three 20cm lined cake tins.
  3. Bake at 175C for 28-30 minutes. Cool completely on racks.
  4. Make frosting by beating 500g full-fat cream cheese with 100g butter and 400g icing sugar until smooth. Layer and coat the cooled cake.
