Dark Chocolate Stout Cake

A magnificently moist layer cake enriched with a full bottle of dark stout, paired with silky chocolate ganache and a punchy coffee buttercream.

Ingredients

  • 330ml dark stout beer
  • 250g unsalted butter
  • 75g best-quality cocoa powder
  • 400g plain flour
  • 400g golden caster sugar
  • 2 tsp bicarbonate of soda
  • 3 large eggs
  • 200ml sour cream

Method

  1. Heat stout and butter in a large saucepan until butter is melted. Whisk in cocoa and sugar.
  2. Beat eggs and sour cream in a large bowl. Add the warm stout mixture, then sift in flour and bicarb. Mix until smooth.
  3. Divide between two 23cm lined cake tins and bake at 180C for 35-40 minutes until a skewer comes out clean.
  4. Cool completely, then sandwich and frost with ganache and coffee buttercream. Dust with cocoa to finish.
